Sesame Soba Noodles

This recipe is: vegetarian


  • 12 oz soba noodles
  • 16 oz cabbage, shredded
  • 1 carrot, grated
  • 6 tbsp rice vinegar 
  • 3 tbsp soy sauce
  • 1.5 tbsp sesame oil
  • 1.5 tbsp sugar 
  • 1 clove garlic, minced
  • 2 tsp ginger, minced
  • 3 green onions, thinly sliced
  • 2 tbsp cilantro, chopped
  • 2 tsp sesame seeds
  • 2 eggs, hard boiled


  1. Cook noodles in a large pot according to package directions. Rinse with cold water, drain, and set aside.
  2. In the same pot, heat 1/2 tbsp sesame oil over medium-high heat. When hot, add the garlic and ginger and cook until fragrant. Add the cabbage and carrot and cook until softened.
  3. Meanwhile, combine the rice vinegar, soy sauce, remaining sesame oil, and sugar. 
  4. When the cabbage is done, mix in the sauce, cilantro, green onions, and sesame seeds. Mix in the noodles. Serve topped with the egg and additional green onion and sesame seeds, if desired.

Serves 4.
