vegan shamrock shake

ingredients

FOR THE SHAKE

  • 1 400 mL can full-fat coconut milk (1 3/4 cups), frozen in an ice cube tray
  • 1 cup non-dairy milk (such as oat, soy, or almond)
  • 2 – 3 Tablespoons agave nectar
  • 1/4 teaspoon peppermint extract
  • 1/4 teaspoon vanilla extract
  • 8 – 10 drops vegan green food coloring

OPTIONAL TOPPINGS

  • vegan whipped cream (I made some by whipping 3 ounces chilled full-fat coconut milk + 1.5 chilled ounces Coco Reàl in a cold bowl with cold beaters)
  • green sprinkles
  • fresh mint leaves
  • maraschino cherries
  • vegan chocolate syrup

method

  1. Combine the frozen cubes of full-fat coconut milk, non-dairy milk, agave, peppermint extract, vanilla extract, and food coloring in a blender. Blend until smooth and creamy. Divide among two glasses. Optionally, you can decorate your shakes with any additional toppings.
